For our 21+ diners attending the Moke’s Bread and Breakfast pop-up event this coming Saturday evening Chef Christopher Gee and Keola Warren have prepared a list of suggested wine/beer pairings for each course below. CHAPTER 1

“SCALLOP AND SHRIMP BOUDIN”

Homemade sausage of prawns, scallops, Chinese sausage, and Asian aromatics with a slow roasted tomato curried crisp and creamy grits

Recommended pairing: Japanese rice lager such as Echigo/Cava Spanish sparkling wine

CHAPTER 2

“SWEET PEA PANNA COTTA”

A summertime salad of fresh spinach, mint, basil, toasted pumpkin seeds, with a chilled pea panna cotta and creamy lardon vinaigrette

Recommended pairing: Maui Bikini Blonde/Chablis

CHAPTER 3

“HOT AND SOUR RAMEN”

Fresh chukka soba with a hot and sour chicken broth, seasonal vegetables, and vegetable gyoza

Crispy cube of cured pork belly with a sweet potato hash, poached egg, and a verde Hollandaise
